I am a Chef and hospitality manager with over twenty-five years of cooking experience, now living and working in the Channel Islands. I’ve worked on six islands hence the title of the blog. I have worked in probably just about every type of restaurant you can imagine, from beachside burger joints to famous pizza restaurants and in more than a few really good food pubs, historic country inns, and a former RAC Blue Riband Hotel of the Year. Along the way, I have helped to create a small informal restaurant group, demonstrated at food festivals and contributed to the Real Food Festival Cookery Book, Manner and Frost magazines. I am starting to write this blog and at The Online Cookery School.

These recipe posts are all about one of my favourite cuisines, I just love American cooking, Tex-Mex, Cajun, Creole, and all things BBQ. I’ve been lucky to travel in the States ( but not enough ) so I just want to show some of the amazing dishes from contemporary to classics that I love to cook and eat.
